And gacked from Epicurious.com is my personal favorite recipe for sweet potato latkes:

1 pound sweet potatoes, peeled
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon brown sugar
1 teaspoon baking powder
1/2 teaspoon cayenne powder
2 teaspoons curry powder
1 teaspoon cumin
Salt and freshly ground pepper to taste
2 large eggs, beaten
1/2 cup milk (approximately)
Peanut oil for frying


1. Grate the sweet potatoes coarsely. In a separate bowl mix the flour, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, and salt and pepper.
2. Add the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny; if too stiff, add more milk.

3. Heat 1/4 inch of peanut oil in a frying pan until it is barely smoking. Drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.

Yield: 16 three-inch pancakes (D).

Hmm, I actually wanted to put up some of your stuff on my memory, but it didn't work. The other S2-layouts usually have a "add to memories" on their site - I completely miss it at yours .. Can't you please make it? Would be nice. For example: Sarea_Okelani has it as button, Emma_Grant has it written in the sidebar ...

However, right, Chanukkah starts .. Oi .. haven't made up an excuse yet to skip the ball ... argh! Need to think fast and call up my people ..

Despite the fact that I usually have a hard time staying in the same room as Live with Regis and Kelly, it was worth the annoyance to hear the Bare Naked Ladies do a very straightforward version of 'Hanukah O Hanukah'.

omg, I think I would be your personal slave *for life* (after I get over this cold or whatever it is) if I could have some of those!! I have been on a sweet potato [just typed "potter" LOL] kick for about two years now, but have never found good SP latkes.

I can't believe Hanukkah starts tonite...it snuck up on me this year, and I can't even attend any of the parties this year b/c they are all on Sunday when I have unchangeable plans.

ps -- how do I find this BNL song everyone is talking about? I don't have kazaa or other song-sharing software on my computer for fear of spyware...
