Happy Chanukah to all my fellow Members of the Tribe!And here's my sweet potato latke recipe:
3 medium sweet potatoes, peeled & shredded, about 4 cups
2 eggs, beaten
1 onion, finely chopped
Salt to taste
Oil for frying
DIRECTIONS: Combine potato, eggs, onion & salt mixing well. In a large skillet heat oil over medium heat. Spoon 1/4 cup potato mixture into the oil, flatten slightly to form a 4" patty. Cook 1 1/2-2 minutes per side or until each side is golden. Drain on paper towels. Serve warm, ideally with sour cream or gingered applesauce.

TIME: 20 minutes
