Has anyone done document authentication to learn age/provinence of the paper, etc?

Heidi--Check with the American Institute of Conservators. http://aic.stanford.edu/ They can give you the name of a conservator in your area who is trained in that sort of work.

You're in Florida, I recall? You might try finding a Mormon temple or archive in your town--they're pretty widespread down there. They're very serious about geneology and preservation of records. My father used to do research at an archive they maintained in Gainesville. They could probably give you some information.

I second this. I've done a bit of work in this area, but never unsupervised, and so don't feel entirely qualified giving you any sort of advice. :)
