I've not stayed at the Disney place in the summer but I've stayed in Vero Beach a few times in the summer (late July) and it was slow and pretty quiet in the touristy areas. Not as slow as Marco Island was in the summer but slower than say... Clearwater Beach. But besides that, the area is pretty but not close to much.
I've stayed there before! :) I don't know how far it is to Cape Canaveral but it really is a nice place. They've got a pool with a big slide that twists around as well as a smaller play area for younger kids. I think it's like a pirate ship that they can run around on. There's also direct access to the beach but if you see signs that warn you about the Portuguese Man-of-Wars, heed that warning. They may look like little plastic baggies filled with water but my brother got stung on both feet and I don't need to say that he was in pain.
The rooms are comfortable and nice. If you tell them it's your first time there, you might get a room with a VCR. We had one our first time but when we went back, we told them we had been there before and didn't get the VCR that time lol. The restaurant in the hotel does character breakfasts too. I remember Goofy and his son Max coming out.
