Happy Chanukah to all my fellow Members of the Tribe!

And here's my sweet potato latke recipe:

3 medium sweet potatoes, peeled & shredded, about 4 cups
2 eggs, beaten
1 onion, finely chopped
Salt to taste
Oil for frying

DIRECTIONS: Combine potato, eggs, onion & salt mixing well. In a large skillet heat oil over medium heat. Spoon 1/4 cup potato mixture into the oil, flatten slightly to form a 4" patty. Cook 1 1/2-2 minutes per side or until each side is golden. Drain on paper towels. Serve warm, ideally with sour cream or gingered applesauce.

SERVINGS: 10
TIME: 20 minutes



We're off to a Chanukah party tonight, then will spend a lot of time tomorrow getting organized for our annual Chanukah party. We're sticking snowflake decals on all the windows...

Ooooh, sweet potato latkes? Never made them with sweet potatoes. Must try (although I don't count on their success, my latkes always turn out a greasy slimy gloppy soggy mess, sigh).

One question - are they actual sweet potatoes or yams?

Either way, I think I'm going to have to try this over the long New Year's weekend when I get back to Chicago.

Sweet potatoes. Yams are even drier, and they won't hold together.

yummmm! that soudns liek somethign I could try to puttogether perhaps sometime. did yo ueman to say to bake this in one large bit or in =separate portions? I idnd't quiet catch that. But it soudns good and I saved it, also because I liek to collect traditioinal/cultural recipes.

Just wanted to add my Chanuka wishes to you, Heidi. Hope you enjoy your latkes (know I'm enjoying mine), and to the person who wanted to know the signifigance- it has to do with the fact that it's fried in oil and the miracle was oil lasting for one day, burning for eight.

Happy Chanukah! The latkes I made this year actually had leeks instead of onions... it's interesting, and different.
